Fill the slow nights (highest impact)

  • Industry night — Monday discount for hospitality workers; they tip well, come late, and bring the cool.
  • Weekday family bundle — feed four for a set price, pickup only, ordered through your direct channel.
  • Themed weeknights — taco Tuesday works because it's a ritual, not a discount; build a ritual you own.
  • Live trivia or vinyl night — sells drinks and dwell time on your deadest evening for the cost of a host.

Bundle margin, don't discount it

  • Prix fixe on slow nights — three courses at a set price steers guests to high-margin items while feeling premium.
  • Add-on pricing — $3 drink with any sandwich beats 15% off everything; beverage margin funds the deal.
  • Happy hour on food you engineer — apps at 25% food cost priced to feel like a steal.
  • Gift card multipliers in December — buy $100, get $20; you're selling January traffic at face value.

Reward the behavior you want

  • First direct order code on every marketplace box insert — a discount that buys back your own guest is the best money in the building.
  • Double loyalty points on slow dayparts — moves regulars without touching price.
  • Birthday item, not birthday percent — a free dessert brings a table of four full-price covers.
  • Lapsed-guest win-back at 30/60/90 days — automated, targeted, and invisible to full-price regulars.

The two rules that protect the brand

Every promotion needs a fence (a day, a daypart, a channel, an audience) and an expiration. Fences keep the discount from bleeding into full-price demand; expirations keep 'limited time' honest. And run promotions through channels you own — your list, your app, your ordering site — so the offer builds your asset instead of a coupon site's. Track redemption against incremental traffic monthly; a promotion that redeems heavily on your busiest night isn't working, it's leaking.
