A barback supports bartenders by stocking, cleaning, and keeping the bar moving during service. It is a physical, fast-paced support role and a common first step toward bartending. Here is what the job looks like across a shift, in the order it happens.
Opening duties
- Fill ice wells and bins and check the ice machine
- Pull and cut fruit garnishes and refill the garnish tray
- Stock the bar with beer, wine, liquor, mixers, and napkins
- Wipe down the bar top, shelves, and back bar
- Check keg levels and have replacement kegs staged
During service
- Keep ice and garnishes full before they run out
- Swap empty kegs and bottles without disrupting the bartender
- Wash glasses and bar tools continuously
- Clear empties, dirty glasses, and trash from the bar
- Run drinks or supplies to servers and tables when asked
- Watch for spills and wipe the floor and rail right away
- Tell the bartender and manager about any low stock early
Closing duties
- Break down and wash all bar tools and mats
- Restock beer, wine, and liquor for the next shift
- Take out trash and recycling and clean the bar floor
- Wrap and store garnishes and perishable items
- Report broken equipment or missing supplies to the manager
Weekly duties
- Help with the weekly liquor, beer, and wine inventory
- Deep clean beer lines, coolers, and under-bar areas on schedule
- Reorganize the storeroom so the busiest items are easy to reach
- Review bar menu changes with the head bartender
